missionaries love cookies


Two delicious cookie recipes from Sister Hawker and Davis who is from Australia. The butter one is hers and was a favorite at interviews along with the puffy meringue cookies which came in 2nd. Far right are the Anzac, the grayish round balls are the meringues.

Anzac Biscuits----Sister Davis Australian Cookies

Serving Size: 10 cookies

Ingredients:
125 gram butter (1 stick+1 T. butter), chopped
2 tablespoon golden syrup (found by molasses, corn syrup etc.)
1/2 teaspoon bicarb soda (baking soda)
2 tablespoon boiling water
1 cup traditional rolled oats
1 cup plain flour
1 cup caster (fine) sugar or regular
3/4 cup dessicated (chopped in blender, finely) coconut or use regular

Directions:
1. Preheat the oven to slow, 150C (350F). (130C for fan forced) (convection oven)
2. Lightly grease oven trays.
3. Combine butter and golden syrup in a saucepan.
4. Stir over a low heat until butter is melted.
5. Stir in combined soda and water.
6. Combine oats, flour, sugar and coconut in a large bowl.
7. Add butter mixture.
8. Mix well.
9. Drop round teaspoons of mixture about 4cm apart on the oven trays.
10. Flatten slightly.
11. Bake for about 10 mins or less or until lightly browned.
12. Cool on trays.

Biscuits are quite chewy, for a slightly softer cookie, bake for about 8 mins instead of 10.
Do not substitute the caster sugar or the golden syrup for any similar ingredients. These make the flavour!
Results will not be as good in a fan forced oven. Note: I mom, made the dough and froze it then sliced off ¼ slices and baked them frozen. They are delish.

Surprise Meringue Cookie-Sister Hawker

This is my all time favorite; I have been making them since

I was 14 years old. I always have egg whites in my freezer,

just in case!

2 egg whites at room temperature

1/8 teaspoon cream of tartar

2/3 cup sugar

½ teaspoon vanilla, mint flavoring is good too!

½ cup chocolate chips

½ cup chopped pecans, can be left out

Food coloring if desired

Beat egg whites and cream of tartar until soft peaks form, then

beat in sugar a few tablespoons at a time until it is very stiff peaks

. Stir in the vanilla, chocolate chips and chopped pecans. Drop

by teaspoons onto brown paper covered baking sheets.

Bake at 300degrees for 35-40 minutes.

p.s. you can use mint or almond extract, any flavoring you like with choc. chips or any nuts. Very good.
