Seitan (or wheat gluten, mom used to make this a lot when they were too poor to buy meat)
This is wheat flour stripped of its bran and starch. You can get this product by kneading dough under water for a while. I tried this, it was a bit of a hassle and I wasted the bran and lots of water (also texture wasn't as good as following recipe) BUT if you are living off food storage this would be a hit. You can also buy vital wheat gluten- at most grocery stores- and use it in this recipe: SEITAN O'GREATNESS. I tried it- it was easy and you can adjust the spices to whatever your fancy, just maintain the ratios. AND IT WAS SO GOOD. you can slice it and put it on sandwiches (mmm with a little Dijon) or use it in place of most meat. I think its better than tofu because it doesnt have a strong underlying flavor. Warning it looks really funny...like this:
Pourable Toritllas. These were really fast and surprisingly good. For Emy I added some flax. Cornmeal Tortillas (I used egg replacer instead of an egg...cuts down on sat fat)
Lastly, you may all know this but I learned at enrichment that you can cook grains for half the time if the other half you leave them on the stove, lid on, with a paper towel under the lid to absorb moisture. Worked for me- Nice energy tip R.S.!
